Milk Chocolate Macadamia Nuts Cookies

This week we got new neighbors. So like every new neighbor I feel like we should bring them cookies. Especially since I didn't help them unload their uhaul yesterday and felt endlessly guilty. So we make Milk chocolate Macadamia Nut cookies. The first steps were that I got out a bowl for the dry ingredients and put the sugar in the bowl of my mixer. I also decided to bring the butter to room temperature today. I am in the middle experimenting with butter temperatures which sometimes turns out disastrous. Today wasn't bad.
I scooped the cookies with my giant cookie scoop so I think they are roughly 5 billion calories each. Welcome to the neighborhood.

Milk Chocolate Macadamia Nut Cookies.

1 1/4 cups white sugar
1 cup brown sugar
1. Mix with 1 cup unsalted butter at room temperature.
2. Scoop off the sides and mix for at least 2 minutes to cream the ingredients together.

2 extra large eggs
3 tsp vanilla
3. Mix in at medium low speed one egg at a time.

1.5 cups pancake mix
1.5 cups better for bread flour
1 tsp salt
1 tsp baking soda
2 tsp cornstarch
4. Stir dry ingredients together.
5. Add dry ingredients in 3 parts.- if you want to make it easy for your kids to help pre-measure the dry ingredients into smaller bowls that they can dump into the mixing bowls without spilling.

1 bag milk chocolate chips
1 bag or 2 cups macadamia nuts- unsalted.

6. Stir in chocolate chips and nuts
7. Preheat oven to 350 degrees.
8. Bake scooped cookies for 12 minutes or until edges start to brown and they are done. If the middle sections still glisten they are not done yet.
9. Let cookies cool on the sheet for 10 minutes.
10. Visit the neighbors. Give them cookies. Fresh milk from the local store where you can get it in those adorable glass bottles is optional.
